Menu Plan Monday #2

I found some really great looking recipes last week on other MPM sites.  I'm very sorry that I can't give credit where due as I forgot to record who's blog I found them on. 

I did pretty good on my first MPM.  I did change Wednesday's dinner to Special Egg Salad.  It was just as yummy as promised!  I'm using another recipe found last week this Wednesday.

 

Monday: Chili and Corn Muffins

Tuesday: Rainbow Trout with teriyaki marinade, Rainbow Salad, Brown and Wild Rice mix

Wednesday: Meatloaf Burgers (from freezer - see below), Crash Hot Potatoes, fruit

Thursday: Macaroni and Cheese

Friday: Beef with Noodles

 

Meatloaf Burgers

Use your favorite meatloaf recipe.  Instead of forming a loaf, shape into burgers.  I do 3 burgers to 1 pound of meat.  You can do smaller if your family prefers smaller portions.  I bake them as I would a meatloaf, serve as I would any meatloaf, and freeze the remaining burgers.  They go from my freezer to my microwave on the reheat setting.  They are great as they are or in a bun.  So be sure to make extra !

Meatloaf Burgers! What a great idea! I love leftover meatloaf sandwiches so these must be pretty good. Thanks for sharing!

This does sound really good. I love fish and try to eat fish 2 to 3 times a week. Thanks for the idea's.
